Montreal Bagels Bagel-Along!
Get your cream cheese and lox ready! Bake a dozen Montreal bagels with bagel-expert Laurel Kratochvila (Fine Bagels, Berlin) using an easy-to-follow recipe and technique that you’ll use again and again!
Join bagel baker Laurel Kratochvila for a Montreal bagel bake along! She has a flawless recipe that works for any level of culinary experience. Arguments as to New York v Montreal bagel supremacy encouraged. We will make dough together, let it rise, then shape, boil, and bake our bagels. Come prepared to use some elbow grease! While we wait for the dough to rise, Laurel will talk bagel history and answer practical baking questions. Your own bagel stories are encouraged!

Participants should join from their kitchens armed with the following tools and ingredients:
- Kitchen scale (preferred) or measuring cup
- Measuring spoons
- A large mixing bowl
- A cookie sheet
- Parchment paper or nonstick silpat
- Oven
- Plastic wrap or a damp cloth
- 1 kilo All-purpose or bread flour (America: white bread flour or all-purpose, Germany Weisenmehl 550, France T55)
- Instant yeast 20grams or 2 teaspoons (note: instant yeast is not dry active yeast. If you can’t find it, 40g fresh yeast will do)
- Salt
- White sugar (1/2 cup or 100g)
- Honey (several tablespoons)
- Sesame seeds, poppy seeds, or whatever you like on a bagel!
- Flour for dusting
